Baked Blueberry Pancakes

I love magazines! I love them more than books! And I do love books, I’m dedicating a room in our house as a library. I’m not a wizard in the kitchen, so you’ll find many of the recipes will be inspired and reviewed more than my own recipes – you will know those when they are posted. I love finding recipes and workouts in magazines and ripping them out and making my own little binder full of articles to reference.

I’m on the hunt for easy brunch recipes for when we host, it’s so fun to test recipes to make sure they are worthy of presenting, and eat them!

Review: This recipe is a brunch keeper! For those who are tired of having to flip pancakes all day and keeping some guests waiting – an oven baked pancake is the way to go. I always try recipes first with few modifications, but this makes for a great base. You can add citrus zest or serve with a side of homemade whipped cream or maple syrup and nuts. I’m touting fruit picking as a must-do for when folks come to town to visit, so being able to cook things with our pickin’s is high on my list of recipe finds. I love this for the ease and for the use of fresh fruits.
